Ingredients:
1 cup all-purpose flour
1/2 teaspoon baking powder
Pinch of salt
3/4 cup sugar
3 tablespoons vegetable oil
1 large egg, beaten
1 1/2 cups whole milk
2 tablespoons Jamaican Jerk seasoning (or your favorite)
1 can (14 ounces) sweetened condensed milk
3 cups chopped fresh pineapple, divided
Directions: Preheat oven to 350 °F. Grease and flour a 9×13 inch baking dish. In a medium bowl, whisk together flour, baking powder and salt; set aside. In a large saucepan over medium heat, melt sugar and oil until mixture is smooth. Stir in egg until well mixed.
Gradually add milk; cook and stir until mixture begins to boil. Remove from heat; stir in jerk seasoning. Pour batter into the prepared pan. Sprinkle 1 cup of the chopped pineapple over the batter.
Bake for 30 minutes, or until golden brown. Sprinkle with remaining 2 cups chopped pineapple and let cool for 10 minutes before serving.
